The Best White Chocolate Raspberry Cookie Recipe!

I had a request for the best white chocolate cookie recipe I had, so, of course accepted the challenge. These cookies are different from any other cookies I’ve made because, well the base is cake mix not cookie mix. But don’t worry, I will walk you through on how to mix these cookies step by step, magically. You will be able to eat and serve them in no time. believe it or not, this recipe did not take long to make. And with some preparation it will go smoothly from the beginning to the end.

First you want to prepare all your ingredients. Take your cup of fresh raspberries, rinse them put them in a bowl and sprinkle with a teaspoon of sugar or so. Let them sit aside. Set your oven to 350, chop your white chocolate bar (or you can use 1/2 of white chocolate chips). Get ready to mix.

Add the cake mix

The pudding

Softened Butter

Add the eggs

White Chocolate Chips

Add your Raspberry

After you have mixed all your ingredients and folded in your white chocolate and raspberries, your cookie mix should look like this.

Once the cookies are baked………

You’ll have these gorgeous chewy delicious cookies to enjoy. Just make sure you refrigerate them before serving.

This recipe makes 12 large cookies or 24 medium size

In the picture below, I simply drizzled some melted white chocolate and macadamia nuts on top of the cookies before serving.

Note: Don’t be scared to mix it up. If you or your guess does not like raspberries, try switching the raspberries out with strawberries or cherries as a replacement. These cookies will still be delicious. Let your imagination run wild.

White Chocolate Raspberry Cookie Instructions

  1. First, clean your fresh raspberries, sprinkle with sugar and set aside
  2. Set you oven to 350
  3. Chop 1/2 white chocolate bar
  4. Chop other half of white chocolate bar set aside (you will add this to the cookie mix right after the eggs)
  5. Mix your softened butter, cake mix, pudding, eggs and vanilla extract
  6. Melt the white chocolate and add to the cookie mix
  7. Add the chopped white chocolate
  8. Fold in the Raspberries (do not add the juice)
  9. Spoon cookies onto your cookie sheet and bake 12-15 minutes or until done.
  10. If you want to do as I did in the picture below. Wait until your cookies are cooled and drizzle some white chocolate on the top of your cookie and add some chopped macadamia nuts for a crunch. Either way, they are delicious.
