I will say this is my all-time favorite, “Delicious lemon cream cheese cookies” you can make at home. All you need is lemon cake mix, a lemon, lemon icing, cool whip and cream cheese. You will be able to make these airy lemon cream cookies overnight and serve the next day. I promise you they will be a hit with everyone. Don’t worry, I will walk you step-by-step through this recipe. All you need to do is make sure you have all the ingredients and a little patience.

Now that you have all your ingredients, you will want to prepare your baking sheet and pre heat your oven to 350. While the oven is heating you should zest your lemon (set the zest aside) You will also want to squeeze the juice of your lemon (with a splash of vanilla) and set aside. Now that you have the prerequisites out the way. Let the mixing begin.

In a large bowl add your softened butter

Add the eggs to your lemon cream cheese cookie batter
Lemon pudding for moist cookies
Lemon Juice and Lemon Zest
Add the Lemon Juice and fold in the Lemon Zest

Place Cookie Mixture on the Cookie Sheet

Now that your cookies are mixed, place the mixture on your cookie sheet. Be sure not to put the cookie mixture to close together. The cookies will spread a bit. Remember, each lemon cream cheese cookie will need 2 cookies to make the cream pie.

Let your lemon cookies cool, while your cookies are cooling go ahead and make your cookie filling which will include softened cream cheese, lemon icing and cool whip. Once the cookie filling is made, flip one cookie over add a dollop of cream cheese mixture to your cookies, top with another cookie, repeat and your cookies should be ready to serve. Each recipe will make about 12 cookies.

Although, these cookies are made from store bought cake mix, adding the fresh ingredients will make it seem homemade. No one will know! My family really enjoyed these cookies so much I made another batch the next day. They were a hit!

Lemon Cookie Mix Instructions

  1. Set oven to 350, prepare your baking sheet
  2. In a large bowl, add softened butter, stir
  3. Add eggs, stir
  4. Add the cake mix and the pudding mix stir (cake mix will be a little stiff)
  5. Pour in Lemon Juice
  6. Fold in lemon zest
  7. Add cookie mixture to baking sheet and bake on 350 for 12-15 minutes or until done.
  8. Let cookies cool for about 30 minutes
  9. While cookies are cooling make your cookie cream cheese filling
  10. Add soften cream cheese to a medium – large bowl, stir the cream cheese make sure no lumps in in the cream cheese
  11. Now add 1/2 cup of store bought lemon icing – stir together, again make sure no lumps is in the icing mixture
  12. Next, add the cool whip and mix well.
  13. Cookies should be cooled now, flip cooled cookies over and add the delicious cream cheese icing to the cookie and put another cookie on top, repeat this process until all cookies are made.
  14. Keep in refrigerator until ready to serve.
