Here is a delicious peach cobbler cake you should make this weekend! You can enjoy this dessert in any season. It’s quite a few a steps, but it will be worth it. Making this Peach cobbler cake recipe is one you can serve with peach cobbler icing, with peach cobbler sauce, or with whipped cream. I prefer to serve this dessert all 3 ways, it got rave reviews. You be the judge, though. What I can tell you, this dessert will not lack any peach cobbler flavor. This is a peach cobbler cake recipe you can serve 3 ways! News flash!!! It’s super sweet.

This recipe will have 3 parts, the sauce, the cake mix and the icing. But don’t be overwhelmed. I will walk you through each step.

First you will want to prepare your peach mixture. In this recipe, you may have more peach sauce than needed, but you can always freeze the sauce and store it away to use another day or to add to some ice cream later.

Peach Cobbler Mixture!

In this picture, you will add, the chopped peaches, sugar, butter, spices, vanilla and water. Cook on reduced heat for about 20 minutes, you will want the mixture to be thick (it will act as a concentrate mixture). While the mixture is cooking, you want to prepare your cake batter.

For the Cake Batter, I used a yellow cake box mix. Here you want to stir together the cake mix, oil, egg, milk (the box states water) and fold in the cooled peach cobbler mix. Your cake mix should be ready to pour in the pan. I used a 18×24 cake pan (lined with aluminum foil first and then parchment paper) because I want to serve this cake in an ice box (mini) cake style. But you can use 2 (8-9 inch) cake pans. Whichever you choose will be ok. Make sure the cake batter is spread evenly in the cake pans.

Now that your peach cobbler sauce mix is cool and your cake mix is in the pan.

Add the peach cobbler sauce to the cake mix.

It’s time for the next step. The icing. For the icing, you will need your hand mixer to mix together the following. Cream cheese, butter, vanilla, sugar and some of the peach cobbler sauce. That’s right. I said the peach cobbler sauce. It’s important that this flavor is noticeable throughout the whole cake. This peach cobbler icing is not stiff, if you want the icing to be stiffer, go ahead and add more sugar, ½ cup at a time. Also, this icing is enough to put between layers, you will not use this icing to ice the outsides of the cake because it has peaches in it.

Your cake should already be removed from the oven, cool it on the cooling rack for about 20 minutes or so. Chill the cake.

You can keep the cake in its pan and chill in the refrigerator for a couple hours.

Now we will get ready to assemble our desserts. This recipe is for mini cake (ice box cakes) desserts. Therefore, you will need a 3-inch cookie cutter (If you do not have a 3-inch cookie cutter you can always cut the cake in 3-inch squares with a knife). Remove your chilled cake from the freezer, this will make cutting the cake so much easier.

Now that your cake has chilled for a few hours in the fridge. You must act fast to cut the cake circles. Leave the cake in the pan with the parchment paper. At this time, go ahead and cut as many circles (or squares) as you can.

You should be able to make 8-10 circles (so you can make 5, 2-tier mini cakes or 3, 3-tiered mini cakes). Lay the cut pieces of cake on a new piece of parchment paper until you are ready to assemble.

Now the fun begins, let your imagination run while. There is no wrong way to assemble this dessert, you have options and here are a few suggestions below:

Option One: Lay 1 cake circle on the plate, top with icing, lay another cake circle, top with icing, and top with another layer or add peach sauce to the top and serve.

Option Two: Lay 1 cake circle on the plate, top with peach sauce, lay another cake circle, top with peach sauce, and top that with a dollop of peach icing and serve.

Option Three: lay 1 cake circle on the serving dish, top with icing, lay another cake circle, top with icing, top with another cake circle, add a dollop of peach cobbler icing and add a dollop of peach cobbler sauce mix and add whip cream to the top or sides of the dessert. This will be enough for a sharable dessert.
