You can serve these chewy cookies with or without lemon raspberry sauce.
Here are the only ingredients you will need!

In a small bowl add 1 cup of frozen raspberries, (1/2 cup if you do not want your cookie topped with tart raspberries). Add the lemon juice from 1/4 of a lemon.
In the small bowl add 1 tablespoon of table sugar (or your sweetener of choice)
Add 1/8 teaspoon of vanilla and set to aside for about 1 hour.
Get READY to MIX …………
In a large bowl pour in sugar cookie mix, add 1/3 cup of flour
Add 1 stick of soften unsalted butter
Add 1 egg and stir
Mix for about 1-2 minutes

Cookie mix texture will not be smooth.
Get your baking pan and/or parchment paper to save on clean up time. Then spoon the Raspberry cookie mixture onto the pan. You do not want to make your cookie dollops too big or it will take forever for the cookie to get done.

Bake these Raspberry Lemon Cookies in the over at 350 for 10-13 minutes. Once finished in the oven, be sure to let the cookies cool before eating.

Once cooled, you now can stack the cookies and add the remaining Raspberry Tart Sauce to the cookies. Make sure you add the sauce right before serving to your family and/or friends. I would say a rule of thumb is to add about 1-2 tablespoons of raspberry sauce to 2-3 cookies. This special raspberry cookie recipe will make 24 medium-sized cookies.

- Pre-heat your oven to 350
- In a small bowl, pour in 1 cup of frozen raspberries,
- Add to the frozen raspberries, lemon juice, vanilla and sugar, sit aside for about 1 hour
- In a large bowl, add soften unsalted stick of butter, all-purpose flour, egg and sugar cookie mix
- Next, take raspberry mixture and pour 1/2 of that mixture into the cookie mix, lightly fold in raspberries.
- Cookie batter will look uneven, that’s normal and is ok
- On your cookie sheet, spoon on the cookie mixture (you don’t want to much cookie mix on the pan, as it will take too long to cook)
- Once cookies are cooled, go ahead and put the cookies on a serving dish and drizzle remaining raspberry sauce on cookies (optional)
