I may be a little bias because I loveeeee Key Lime anything (cookies, cakes, or cheesecake). In these delicious cookies the key lime isn’t overpowering and if you want to take it up a notch you could add the key lime coconut glaze on top. All I got to say is yum! Either way, both varieties are good and refreshing. This is the only key lime cookies recipe you will need.

Key Lime cookies would be perfect on a sunny summer day. These cookies are delicious and easy to make in just a few steps. First you will want to mix your room temperature butter together with your vanilla, cream of coconut, lime juice and egg. Mix well.
Next, you will need to add the cookie mixture and the flour to the liquid mix. Your batter should be moist and smooth, just like a consistent cookie mixture.

Once the cookie mixture is prepared. You have one last step. Zest the lime, if you haven’t already go ahead now and fold the zest into the cookie mixture. Now you are ready to scoop the cookie mixture onto the baking sheet. See the picture below. Bake at 350 for about 11-13 minutes.

Here you have a decision to make. The Key Lime Cookies are good without any glaze (believe me), but maybe for a special occasion, you may want to give the cookies that extra special touch and trust me, this coconut key lime glaze will do the trick. Or you can do what I did, I served these cookies half and half. Half with the coconut key lime glaze and half without the glaze, they both were a hit!

- Set your oven to 350 and prepare your cookie sheet for baking.
- Place your room temperature butter in a large bowl
- Then squeeze your limes and set the juice to the size, also at this time go ahead and zest your limes, set aside as well.
- While the butter is in the larger bowl, go ahead and add the vanilla, cream of coconut lime juice (lime juice only) and the egg. Mix well (Mixture may have large lumps of butter floating around, that’s normal and ok).
- Now to the liquid mixture, add the flour and cookie mix. Stir well
- Once mixed well, add the lime zest and fold the lime zest into the cookie batter. Be sure not to over mix.
